Excuse me if I'm confused, this might have been a dream. Is there a mechanism to view what enemy ships one of my ship has destroyed? I suddenly started thinking there was. It might be I'm getting confused with another game.

Once you have fought a ship you can view the components on it in the designer. So after a fight jot down the name got to the ship designer and you should be able to see what ship design you have destroyed.

No. The closest thing you have in SE5 is a kT tally of all the ships a design type has destroyed.
